Smoky Spinach Artichoke Dip!

Spinach Artichoke Dip always takes me back to the days of working at Mimi's Cafe! One day when I was working there I tried this addicting dip and was hooked ever since. I have never made it at home because frankly I did not want all that cheesy temptation. Then recently I was watching an episode of Aarti Party and she made THIS recipe and it just brought  all the cravings back! So I decided to give Aarti's recipe a try and boy was it scrumptious!!! To tell you the truth it is a little to easy to whip up!

8-10 oz frozen chopped spinach, thawed with liquid squeezed out
1 (12-ounce bag) frozen artichoke hearts thawed
1/2 cup (plus more to top finished dip) freshly grated parmesan cheese
1/2 cup grated SMOKED gouda
1/2 cup shredded mozzarella
3 garlic cloves, grated or minced
1/2 teaspoon red pepper flakes
1/2 teaspoon ground coriander
1/2 cup mayo
1/2 cup sour cream
4 ounces soft cream cheese
Tortilla chips, and naan flatbread for dipping

Preheat oven to 350*
Place the spinach in a strainer and squeeze out as much water as you can, set aside
Chop artichokes into bite size chunks
In a large bowl add the spinach and artichokes, 1/2 cup parm, gouda,mozzarella, garlic, red pepper flakes, coriander, mayo, sour cream, and cream cheese and mix well. Pour into an 8x8 baking dish and top with more parm cheese and bake until the edges are bubbly and golden brown. about 30 mins.
Allows to cool a little and dig in with the dippers!
