Southwestern Meatballs

So with the kick off the NFL season (HAPPY FACE) I made some football grub last night for the game. I had been wanting to try out these yummy meatballs and was not sure how to present them. They are a zesty, tender, cheese filled turkey meatball. Not exactly what you would put with pasta. So I decided to wrap them up in a tortilla with myAmazing refried beans and some fresh guacamole. They turned out pretty awesome! I made them earlier in the day and kept them warm in a small crock.

  • 1 lb. ground turkey
  • 2 serrano chiles, seeded and finely chopped
  • 1 onion, grated
  • 2 cloves garlic, grated
  • 1/2 cup breadcrumbs
  • 1 tsp. ground cumin
  • Salt and pepper
  • 4 oz. monterey jack cheese, cubed
  • 2 tsp. EVOO
  • 28-oz. can diced tomatoes

  • Mix together turkey, serranos, onion, garlic, breadcrumbs, cumin, 1 tsp. salt and 1/2 tsp. pepper. Form 16 meatballs around cheese cubes. In skillet, heat EVOO over medium heat. Add meatballs and cook until browned on all sides; add tomatoes and simmer until cooked through, about 10 minutes.
